Lohikukko (Salmon pie)

I was feeling a little bored marking student assignments and thesis since 6:30am... so, I decided to pamper my beloved family with their favorite Finnish delight - Salmon pie. This is one of the hardest item to bake. The most challenging item in my opinion is the Finnish ryebread (ruisleipä). Baking is a wonderful way to take my head away from boredom, and also an effective way for me to refresh before moving on to another challenging task (Reading a boring textbook!). More importantly, my loved ones get to eat something they like, so that I can anchor their heart to me through their tummies - win win situation. *.*
